Home-Made Paratha Chicken Wrap

>> Tuesday, April 24, 2012

Ever thought of wraps with instant paratha? Yes, INSTANT! Haha...I didn't have any pita bread/sandwich bread/buns in stock, so for lunch today, with all the stock of chicken & vegetables that I have in the freezer (and whatever that I can find in the fridge), I decided to do something different instead of the usual chops, pasta, or stir-fries.

You can actually improvise & do whatever you want, put whatever you fancy, into your wrap :D

Paratha wrap with chicken filling!
Colourful & yummilicious :D

Ingredients:
1 piece of chicken breast meat, sliced into thick strips & marinated with salt, pepper, some Italian mixed herbs, & corn flour
1 piece of instant roti paratha, defrosted (you can get this from the supermarket)
Carrots, thin slices/shreds/strips
1/2 a medium tomato, sliced into strips
1/2 a green apple, sliced into thin slices
Spring onions, chopped
Fresh mint leaves, chopped finely
Parsley, chopped finely
1 tablespoon of mayonnaise
Honey
Salt
Pepper
Chili/Chilli sauce (optional)
Slice of cheddar cheese (optional)

Mayonnaise mixture:
1. Combine mayonnaise, mint leaves, parsley, pepper & salt to taste.
2. Drizzle some honey for a touch of sweetness & fragrance. Mix well.

Simple directions:
1. Pan-fry instant paratha without oil 'til both sides are golden brown. Leave aside on a plate for it to cool.
2. Heat oil  in pan & pan-fry chicken 'til golden brown.
3. Remove chicken from pan.
4. Spread the mayonnaise mix onto the paratha.
5. Arrange chicken strips on top of the mayonnaise spread.
6. Pile up the wrap with the rest of the ingredients prepared i.e. carrots, tomatoes, apples, spring onions, cheese & squeeze some chilli sauce over.
7. Wrap the ingredients up with the paratha & your meal is ready to be enjoyed! :D

Having loads of fun in the kitchen,
